Fruit and Vegetable Study
- Ages 40–64
- Hispanic adults
- Non-Hispanic Black adults
- Asian adults
*Note: Multiracial individuals are not eligible for this study.
You cannot participate if:
- You have taken prescription medication (other than for diabetes, hypertension, or hyperlipidemia) for more than one month
- You have had surgery within the past three months
- You are pregnant or breastfeeding

What will I do if I participate?
Participation includes both at-home activities and one in-person visit. Total participation time is up to 4 hours, including at-home steps.
At home:
- Complete two online questionnaires
- Record your meals for 7 days
- Collect one stool sample (from a single bowel movement)
At UConn Storrs:
- Attend one in-person visit (about 65–85 minutes)
During your visit, researchers will:
- Take body measurements
- Conduct a blood draw
- Perform skin measurements on your hand (thumb, palm, wrist)
All measuring devices are safety-certified and have been used in numerous studies.
This study does not include any intervention or follow-up.
Is there compensation for participating?
Yes, you’ll receive $300 if you complete all study procedures. Participants also receive a personalized nutrition report and body composition scan at no cost as part of study participation.
